What makes me happy is a good food. It’s not only the way how the meal looks like but also how it tastes. It’s an eye pleasing and satisfactory for the belly.
It’s a courgette/zucchini season so I got the idea of making stuffed courgettes.
– 4 rounded courgettes
– 300g rice
– 500g of minced beef
– 2 onions
– 1 garlic glove
– pepper and salt
Cook the rice.
For the stuffing:
Put the pan to a medium heat. Melt the butter. When butter foams, add grated onion and garlic, and season it with salt, pepper. Stir 1 minute, add minced beef. Simmer until ready, add shredded parsley.
When the meat is getting ready prepare the courgettes. Wash the zucchinis and cut them in half. Using a spoon, scoop out the flesh.
Combine the meat and the cooked rice, mix it well.
Pre heat the oven to 180 degrees.
Fill the courgettes with meat and rice mixture. Bake for 40 minutes.
